Ingredients:
- 1 cup millet (bajra or foxtail millet)
- 2 cups fresh spinach, finely chopped
- 1 onion, finely chopped
- 1 tomato, chopped
- 1/2 cup green peas
- 2 green chillies, finely chopped
- 1-inch ginger, grated
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Method:
- Rinse the millet thoroughly and soak it in water for 30 minutes.
- Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida.
- Add chopped onions, green chillies, and grated ginger. Sauté until onions turn golden brown.
- Add chopped tomatoes and cook until they are soft and oil separates.
- Add chopped spinach and green peas. Cook until spinach wilts and peas are tender.
- Drain the soaked millet and add it to the pan. Mix well.
- Add turmeric powder, garam masala, and salt. Stir to combine all the ingredients.
- Pour 2 cups of water into the pan. Cover and cook on low flame until the millet is cooked and the water is absorbed.
- Garnish with fresh coriander leaves and serve hot.
