Ingredients:

  • 1 cup yogurt
  • 2 tablespoons besan (gram flour)
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 8-10 curry leaves
  • 2 green chilies, chopped
  • 1-inch ginger, grated
  • 1/2 cup chopped onions
  • 1/2 cup chopped tomatoes
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon jaggery (optional)
  • Salt to taste
  • 3 cups water
  • Fresh coriander leaves for garnish

Method:

  1. In a bowl, whisk together yogurt and besan until smooth. Add water and continue whisking to form a lump-free mixture.
  2. Heat oil in a pan; add mustard seeds, cumin seeds, asafoetida, curry leaves, green chilies, and grated ginger. Sauté until the spices release their aroma.
  3. Add chopped onions and cook until they turn golden brown. Then, add chopped tomatoes and cook until they are soft and pulpy.
  4. Pour the yogurt-besan mixture into the pan, stirring continuously to avoid lumps. Add turmeric powder, red chili powder, jaggery (if using), and salt. Mix well.
  5. Allow the kadhi to simmer on low heat for 20-25 minutes, stirring occasionally.
  6. Once the kadhi thickens and attains a smooth consistency, turn off the heat.
  7. Garnish with fresh coriander leaves.
  8. Serve the Gujarati Kadhi hot with steamed rice or chapati for a delightful vegetarian meal.
