Ingredients:

  1. 10-12 colocasia leaves (taro leaves)
  2. 1 cup gram flour (besan)
  3. 2 tablespoons tamarind pulp
  4. 1 teaspoon ginger-green chili paste
  5. 1 teaspoon ajwain (carom seeds)
  6. 1 teaspoon sesame seeds
  7. 1 teaspoon red chili powder
  8. 1/2 teaspoon turmeric powder
  9. 1/2 teaspoon asafoetida (hing)
  10. 2 tablespoons jaggery, grated
  11. Salt to taste
  12. 2 tablespoons oil

Method:

  1. Wash the colocasia leaves thoroughly and trim the stems. Set aside.
  2. In a bowl, mix gram flour, tamarind pulp, ginger-green chili paste, ajwain, sesame seeds, red chili powder, turmeric powder, asafoetida, jaggery, salt, and 1 tablespoon oil. Add water gradually to make a smooth batter.
  3. Lay out one colocasia leaf on a clean surface and spread a thin layer of the gram flour batter evenly over it.
  4. Place another leaf on top and repeat the process, stacking the leaves with the gram flour mixture in between.
  5. Once you have a layered stack, roll it tightly into a log shape.
  6. Steam the roll for about 25-30 minutes until the gram flour layer is cooked.
  7. Allow it to cool, then slice the roll into rounds.
  8. In a pan, heat 1 tablespoon oil. Add sesame seeds and let them splutter. Place the sliced Patra in the pan and sauté until they are golden brown on both sides.
  9. Serve hot with chutney or ketchup.
