Ingredients:
- 10-12 colocasia leaves (taro leaves)
- 1 cup gram flour (besan)
- 2 tablespoons tamarind pulp
- 1 teaspoon ginger-green chili paste
- 1 teaspoon ajwain (carom seeds)
- 1 teaspoon sesame seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon asafoetida (hing)
- 2 tablespoons jaggery, grated
- Salt to taste
- 2 tablespoons oil
Method:
- Wash the colocasia leaves thoroughly and trim the stems. Set aside.
- In a bowl, mix gram flour, tamarind pulp, ginger-green chili paste, ajwain, sesame seeds, red chili powder, turmeric powder, asafoetida, jaggery, salt, and 1 tablespoon oil. Add water gradually to make a smooth batter.
- Lay out one colocasia leaf on a clean surface and spread a thin layer of the gram flour batter evenly over it.
- Place another leaf on top and repeat the process, stacking the leaves with the gram flour mixture in between.
- Once you have a layered stack, roll it tightly into a log shape.
- Steam the roll for about 25-30 minutes until the gram flour layer is cooked.
- Allow it to cool, then slice the roll into rounds.
- In a pan, heat 1 tablespoon oil. Add sesame seeds and let them splutter. Place the sliced Patra in the pan and sauté until they are golden brown on both sides.
- Serve hot with chutney or ketchup.
